Ingredients
Prep
- 6 boneless chicken breasts thin cut
- 4 T butter
- 1/2 C roasted peanuts or any nut
- 1 bunch asparagus
- 1/4 C olive oil
- salt and pepper to taste
On Cooking Day
- 1 pkg cous cous
- 1/2 C crumbled feta cheese optional
Instructions
To Assemble
- Place chicken in baking dish and pour melted butter over it. Sprinkle with crushed nuts and cover.
- In a separate large zipper bag, add asparagus, olive oil, and salt and pepper.
To Cook
- Place chicken and asparagus onto foil-lined sheet pan. Bake at 375 degrees for 25 minutes (or until chicken is cooked through).
- Prepare cous cous according to package directions. Mix in feta if desired.
