Butter Nut Chicken and Asparagus – CE

Ingredients

Prep
  • 6 boneless chicken breasts thin cut
  • 4 T butter
  • 1/2 C roasted peanuts or any nut
  • 1 bunch asparagus
  • 1/4 C olive oil
  • salt and pepper to taste
On Cooking Day
  • 1 pkg cous cous
  • 1/2 C crumbled feta cheese optional

Instructions

To Assemble
  1. Place chicken in baking dish and pour melted butter over it. Sprinkle with crushed nuts and cover.
  2. In a separate large zipper bag, add asparagus, olive oil, and salt and pepper.
To Cook
  1. Place chicken and asparagus onto foil-lined sheet pan. Bake at 375 degrees for 25 minutes (or until chicken is cooked through).
  2. Prepare cous cous according to package directions. Mix in feta if desired.
