Better Than Mom’s Meatloaf - CE
Mashed cauliflower and green salad

Ingredients

Prep
  • 3 lbs ground beef
  • 1 bag frozen pepper and onion blend
  • 2 T Italian seasoning
  • 1/4 C whole wheat flour
  • 2 egg
  • 6 oz can tomato paste
  • salt and pepper to taste
  • 8 slices bacon uncured, nitrite free
On Cooking Day
  • 16 oz frozen cauliflower
  • 1 T milk
  • 6 C salad greens

Instructions

To Assemble
  1. Combine all ingredients except for bacon in a large mixing bowl.
  2. Squish with your hands to mix, using gloves if you prefer.
  3. Place into a 8 x 8 baking dish sprayed with non stick spray and press to form a loaf.
  4. Place bacon strips in a single layer over the top.
  5. Cover with plastic wrap.
To Cook
  1. Remove plastic wrap.
  2. Bake at 375 degrees for 45 minutes or until meatloaf is done and bacon is browned.
  3. Cook cauliflower according to package directions.
  4. Mash cauliflower with milk. Add salt and pepper to taste.
  5. Serve with green salad.
