Ingredients
Prep
- 2 1/2 lbs flank steak
- 1/4 C balsamic vinegar
- 1/4 C olive oil
- 1 T Dijon mustard
- 1 t honey
- 2 t minced garlic
- salt and pepper to taste
- 2 C cherry tomato
- 1 ball fresh mozzarella
- 2 T fresh basil
On Cooking Day
- 6 corn on the cob
- 6 C salad greens
Instructions
To Assemble
- Place steak in large zipper bag. Mix next 6 ingredients in a bowl with lid. Add half the marinade to the steak and save remaining half for cook day. Zip steak bag to seal and squish to mix.
- Cut tomatoes in half. Chop mozzarella and thinly slice basil. Mix all 3 ingredients in bowl with lid.
To Cook
- Grill steak until desired level of doneness (about 3-5 minutes per side). Grill corn.
- Serve steak with caprese topping and remaining marinade. Serve with salad.
