Balsamic Grilled Flank Steak Caprese- CE

Ingredients

Prep
  • 2 1/2 lbs flank steak
  • 1/4 C balsamic vinegar
  • 1/4 C olive oil
  • 1 T Dijon mustard
  • 1 t honey
  • 2 t minced garlic
  • salt and pepper to taste
  • 2 C cherry tomato
  • 1 ball fresh mozzarella
  • 2 T fresh basil
On Cooking Day
  • 6 corn on the cob
  • 6 C salad greens

Instructions

To Assemble
  1. Place steak in large zipper bag. Mix next 6 ingredients in a bowl with lid. Add half the marinade to the steak and save remaining half for cook day. Zip steak bag to seal and squish to mix.
  2. Cut tomatoes in half. Chop mozzarella and thinly slice basil. Mix all 3 ingredients in bowl with lid.
To Cook
  1. Grill steak until desired level of doneness (about 3-5 minutes per side). Grill corn.
  2. Serve steak with caprese topping and remaining marinade. Serve with salad.
