Ingredients
Prep
- 1 bag mini bell peppers
- 1 onion
- 6 salmon filets single serving size
- 20 oz cauliflower crumbles
- 3 T lime juice
- 1/4 C fresh parsley
- 3 T olive oil
- 3 T minced garlic
- 1/2 t red pepper flakes
- 1 t cumin
- 1 T honey optional
- salt and pepper to taste
- 1 C shredded pepper jack cheese
On Cooking Day
- 10 C salad greens
Instructions
To Assemble
- Add salmon filets to baking dish sprayed with non stick spray.
- Slice peppers and onion into chunks and sprinkle around salmon in baking dish.
- Pour cauliflower crumbles into another baking dish sprayed with non stick spray.
- Mix next 8 ingredients in small bowl. Pour half over salmon and half over cauliflower crumbles. Mix cauliflower well, top with pepper jack cheese and cover. Cover salmon.
To Cook
- Bake salmon- uncoverd and cauliflower-covered in a 375 degree oven for 20-25 minutes or until fish is cooked through.
- Serve with salad.
