Baked Chili Lime Salmon and Peppers – CE

Ingredients

Prep
  • 1 bag mini bell peppers
  • 1 onion
  • 6 salmon filets single serving size
  • 20 oz cauliflower crumbles
  • 3 T lime juice
  • 1/4 C fresh parsley
  • 3 T olive oil
  • 3 T minced garlic
  • 1/2 t red pepper flakes
  • 1 t cumin
  • 1 T honey optional
  • salt and pepper to taste
  • 1 C shredded pepper jack cheese
On Cooking Day
  • 10 C salad greens

Instructions

To Assemble
  1. Add salmon filets to baking dish sprayed with non stick spray.
  2. Slice peppers and onion into chunks and sprinkle around salmon in baking dish.
  3. Pour cauliflower crumbles into another baking dish sprayed with non stick spray.
  4. Mix next 8 ingredients in small bowl. Pour half over salmon and half over cauliflower crumbles. Mix cauliflower well, top with pepper jack cheese and cover. Cover salmon.
To Cook
  1. Bake salmon- uncoverd and cauliflower-covered in a 375 degree oven for 20-25 minutes or until fish is cooked through.
  2. Serve with salad.
