Ingredients
Prep
- 6 boneless chicken breasts
- salt and pepper to taste
- 2 C frozen chopped onion
- 2 apples
- 5 T raisins
- 3/4 C balsamic vinegar
- 3 T brown sugar
- 3 t Dijon mustard
- 4 t cornstarch
- 3 zucchini
On Cooking Day
- 2 T olive oil
- 6 C salad greens
Instructions
To Assemble
- Cut chicken into strips and add to casserole dish. Season with salt and pepper. Chop apple into bite size pieces.
- In a large bowl, mix onion, apple, and raisins. In a small bowl, whisk next 4 ingredients until cornstarch has dissolved. Pour into bowl with apples and stir.
- Spread mixture on top of chicken. Cover.
- Cut zucchini into bite-sized pieces.
- In a large zipper bag, add zucchini and salt and pepper.
To Cook
- Bake chicken at 400 degrees for 30-35 minutes (or until chicken is cooked through and apples are tender).
- Add olive oil to zucchini, then put in small sheet pan and bake during last 10-15 minutes.
- Serve chicken with zucchini and side salad.
