Apple Raisin Chicken – CE

Ingredients

Prep
  • 6 boneless chicken breasts
  • salt and pepper to taste
  • 2 C frozen chopped onion
  • 2 apples
  • 5 T raisins
  • 3/4 C balsamic vinegar
  • 3 T brown sugar
  • 3 t Dijon mustard
  • 4 t cornstarch
  • 3 zucchini
On Cooking Day
  • 2 T olive oil
  • 6 C salad greens

Instructions

To Assemble
  1. Cut chicken into strips and add to casserole dish. Season with salt and pepper. Chop apple into bite size pieces.
  2. In a large bowl, mix onion, apple, and raisins. In a small bowl, whisk next 4 ingredients until cornstarch has dissolved. Pour into bowl with apples and stir.
  3. Spread mixture on top of chicken. Cover.
  4. Cut zucchini into bite-sized pieces.
  5. In a large zipper bag, add zucchini and salt and pepper.
To Cook
  1. Bake chicken at 400 degrees for 30-35 minutes (or until chicken is cooked through and apples are tender).
  2. Add olive oil to zucchini, then put in small sheet pan and bake during last 10-15 minutes.
  3. Serve chicken with zucchini and side salad.
