Cilantro Lime Shrimp
Cilantro lime shrimp is paired with a Mexican fiesta rice blend made up of rice, black beans, corn, tomatoes, cilantro, and lime juice. I love cooking shrimp because it’s just so quick (and tasty)! The shrimp is marinated in garlic, cilantro, and lime juice, giving it so much flavor! If you want a quick and easy meal for a busy weeknight, this cilantro lime shrimp can be your go-to meal!
Ingredients Needed:
- Tomato
- Canned black beans
- Frozen corn
- Lime juice
- Chili powder
- Dried cilantro
- Salt and pepper to taste

- Minced garlic
How to Prep Cilantro Lime Shrimp
The beauty of the 5 Dinners 1 Hour recipes is that they can be prepped ahead of time to make dinner a cinch. To prep the cilantro lime shrimp ahead of time, first dice the tomato.
Secondly, drain and rinse the black beans. In a bowl with lid, combine the tomatoes and beans with the corn, lime juice, chili powder, and cilantro. The cilantro lime shrimp recipe calls for dried cilantro for ease, but you can absolutely use fresh cilantro (one of my favorite fresh herbs)!
The tomato, bean, corn mixture will be used for the rice on cooking day. If you have not discovered to the convince of rice steamers, then you should give them a try! They make it so easy!
Finally, it is time to create the marinade for the cilantro lime shrimp. Combine the olive oil, garlic, and remaining cilantro and lime juice with shrimp. Store in a zipper bag or container until cooking day. When prepping seafood recipes ahead of time, it’s best to cook it on day one or day two, since seafood does not last as long in the fridge as other raw meats.
How to Cook Cilantro Lime Shrimp
When it is time to cook the cilantro lime shrimp, begin by heating up a large skillet over medium heat. Add some olive oil and add the shrimp. Cook for about 5 minutes, or until shrimp turns opaque. Remember to keep an eye on it, because shrimp always cooks super fast!
While the shrimp is cooking, pop the rice steamers into the microwave and cook according to package directions. After that, the fiesta rice ingredients you already prepped with the rice.

- 1 tomato
- 15 oz canned black beans rinsed
- 1 C frozen corn
- 1 T lime juice
- 1/2 t chili powder
- 1 t dried cilantro
- salt and pepper to taste
- 2 lb peeled deveined raw shrimp
- 2 T olive oil
- 4 t minced garlic
- 1 t dried cilantro
- 2 T lime juice
- 2 bag frozen brown rice steamer
- 16 oz frozen green beans
Instructions
- Chop tomato and place in medium container with lid. Add next 6 ingredients and mix well. This will be added to the rice later.
- Place shrimp and next 4 ingredients in large zipper bag. Zip to seal and squish around to mix.
- Cook brown rice according to package directions then toss with tomato mixture before serving.
- Grill shrimp on indoor grill or in skillet until pink and cooked through.
- Cook green beans according to package directions.
