These are light and healthy!
1 small cucumber
2 tomatoes
4-6 medium chicken breasts
1 C. frozen chopped onion
1 t minced garlic
1 ½ t lemon pepper seasoning
½ t dried oregano
¼ t ground allspice
Chop cucumber and tomatoes and store in a medium container with lid.
Place last 6 ingredients in the slow cooker and cook on low for 6-8 hours. Shred chicken with two forks then add 1/2-1 cup Greek yogurt and mix well.
Serve in pita bread with tomato cucumber relish. Tastes great warm or cold.
