Easy Italian Roast Beef

This easy Italian roast beef is super moist and packed full of flavor! It is all cooked in the slow cooker, so it is perfect for those busy school weeknights!

What is Italian Roast Beef?

Italian roast beef is traditionally a Chicago-style sandwich with sliced or shredded beef. It is cooked with Italian dressing flavors and often pepperoncini peppers. It is usually served on a hoagie roll as a sandwich, but this easy Italian roast beef recipe is a twist on the original version. The roast beef is flavored with Italian dressing, making it quick and easy to put together, and instead of being in sandwich form, it is cooked with potatoes and carrots, like a traditional roast recipe. 

Ingredients Needed for Easy Italian Roast Beef:

  • Beef roast (whichever kind you prefer)
  • New potatoes (the small baby variety)
  • Baby carrots
  • Zesty Italian salad dressing
  • Minced garlic
  • Italian seasoning

 

How to Prep Easy Italian Roast Beef

If you want to make your life easier, then you seriously need to consider meal prepping. All of the recipes in our 5 Dinners 1 Hour meal plans are designed to be prepped ahead of time, so getting dinner on the table is super easy and quick. I love being able to just being able to toss dinner in the crockpot without getting the kitchen messy. 

In order to prep the easy Italian roast beef ahead of time, all you have to do is put all the ingredients into a large zipper bag. Firstly, add the roast, potatoes, and carrots to the bag. If you are using baby potatoes, then you should not have to cut them, otherwise, cut them into big chunks. 

Secondly, add the Italian salad dressing, garlic, and Italian seasoning to the bag. Instead of store-bought dressing, you can also opt to make your own. You can try this homemade Italian dressing recipe from Sally’s Baking Addiction.

 

How to Cook Easy Italian Roast Beef

Once you are ready to get this easy Italian roast beef cooking, just add the prepped ingredients to the slow cooker. After that, add 1 cup of water to the pot. Then, set to low and cook for 8-10.

Ingredients

Prep
  • 3 lb beef roast any cut
  • 1 lb baby new potatoes
  • 1 lb baby carrots
  • 1 1/2 C zesty Italian salad dressing
  • 2 t minced garlic
  • 2 t Italian seasoning
On Cooking Day
  • 1 pkg dinner rolls
  • 1 C water

Instructions

To Assemble
  1. Place all ingredients in a large zipper bag. Zip to seal and squish around to mix.
To Cook
  1. Pour all ingredients into slow cooker. Add 1 cup water. Cook on low for 8 - 10 hours.
  2. Cook dinner rolls according to package directions.
