Ingredients in Creamy Chicken Gnocchi
Similar to the famous Italian chain’s soup, this version contains all of the same ingredients with the exception of shredded carrots and celery. These can be added in for some color in the soup as well as additional flavor. Substituting chicken breast with a cooked, shredded, rotisserie chicken or chicken leftover from another meal will make this recipe even more effortless.

Ingredients
- 2 boneless chicken breasts
- 1 package sliced mushrooms
- 2 C fresh spinach
- 1/2 C frozen chopped onion
- 1 t minced garlic
- salt and pepper to taste
- 1/4 C flour
- 3/4 C milk
- 1/2 C heavy cream or half & half
- 1/2 C Parmesan cheese optional
- 2 C chicken broth
- 1 package frozen gnocchi
- 6 C salad greens
Instructions
- Add first 6 ingredients to a large zipper bag.
- Add flour thru parmesan cheese (if using) to a small bowl with lid. Mix well.
- Add chicken mixture to slow cooker along with 2 cups chicken broth. Cook on low for 6 - 8 hours.
- Add in cream and gnocchi, turn to high and cook 30-45 minutes until soup is thick.
- Serve with salad.
