Who wouldn’t want to have this for dinner after a busy day? It is so good and ready in 15 minutes!
2 lbs large peeled deveined shrimp (raw with tail on)
2 T olive oil
Salt & pepper to taste
¾ C. butter, softened
4 t minced garlic
1 T dried parsley flakes
¼ t crushed red pepper flakes
2 T lemon juice
1 large egg yolk
2/3 C. Panko bread crumbs
Spray a 9×13 baking dish with non stick spray.
Place shrimp and next two ingredients in baking dish. Toss to mix.
Mix next 6 ingredients in a medium bowl. Use a fork if needed to blend well.
Dab butter mixture evenly over shrimp.
Sprinkle with Panko bread crumbs
Cover with foil.
To bake:
Bake uncovered in a 425 degree oven for 12-15 minutes or until shrimp are cooked through.
Watch for sales on shrimp and stock up when it is at a good price. You can freeze it until needed.
