Tender beef, carrots and sweet corn on the cob make for a full meal all in one pot! Add some dinner rolls or a salad and dinner is done!
The carrots turn out super sweet and tender. They are so good. I think this is my favorite way to cook them. You can add a little butter and brown sugar if you really want to go crazy. I liked them with just salt and pepper.
You could easily change this up and use BBQ sauce on the meat, potatoes (for baked potatoes) and corn on the cob. This SLOW COOKED TANGY BEEF is so versatile.

Ingredients
- 2 lb beef stew meat
- 1/2 C ketchup
- 1 T Worcestershire sauce
- 1 T lemon juice
- 2 T horseradish from a jar
- 1 T Dijon mustard
- salt and pepper to taste
- 6 corn on the cob
- 2 C beef broth
- 16 oz baby carrots
Instructions
- Place first 7 ingredients in large zipper bag. Zip to seal and squish around to mix.
- Wrap corn cobs in foil.
- Place beef mixture in slow cooker along with beef broth. Cover with a sheet of foil and add foil wrapped corn cobs. Add another sheet of foil and add carrots with salt and pepper. Cook on low for 7 - 8 hours.
