Can you say EASY dinner? This Slow Cooked BBQ Chicken Baked Potatoes is so easy that really it isn’t a recipe.
It’s more of a non-recipe, recipe. Simple and it is GOOD!! I mean really good for not being fancy or difficult.
All you have to do on cooking day is just put the chicken in the crock pot. Cover with tin foil. Now place the potatoes on top of that!!
Set the timer and then just walk away and wait….
VOILA!!
There you have it… dinner is done…..
Slow Cooked BBQ Chicken Baked Potatoes
Pile all the ingredients into the slow cooker.
Potatoes
BBQ seasoning
Chopped onions (optional)
Shredded cheese
Sour Cream (optional)
BBQ sauce
Layer of foil
Wrap each potato in foil and pile on top
Cover and cook!
It really is a super simple dinner. You can even leave the chicken on the side and make a loaded baked potato to go with it.

Servings: 4-6 |
Ingredients
- 6 baking potatoes russet
- 6 boneless chicken breasts
- 1 C BBQ sauce
- 6 C salad greens
- potato toppings (butter, sour cream, cheese, bacon bits)
Instructions
- Place chicken and BBQ sauce in large zipper bag. Zip to seal and squish around to mix.
- Wrap each potato in foil and store in refrigerator.
- Place chicken in slow cooker. Cover with foil and place foil wrapped potatoes over chicken. Cook on low 6 hours.
- Shred chicken with forks and serve over potatoes.
- Serve with green salad.
