Slow Cooked Baked Potato Soup
Besides the flavor, one of the best things about the slow cooked baked potato soup is the fact that most everything needed to make it is probably already in your pantry! Potatoes, which we use in the form of frozen hash browns for ease, some onions and bacon for flavor, and chicken broth, milk, and flour are all you need. - Real bacon bits (or cooked bacon)
How to Prep Slow Cooked Baked Potato Soup
Like all of the 5 Dinners 1 Hour recipes, this slow cooked baked potato soup can be prepped ahead of time, so that all you have to do is throw it in crockpot on cooking day. To begin with, add the frozen chopped onion, milk, and flour to a small bowl with lid. You can certainly use fresh onion instead of frozen, but frozen saves time! Believe it or not, that is all you need to do the prep ahead of time!
How to Cook Slow Cooked Baked Potato Soup
Once you are ready to cook the slow cooked baked potato soup, add the frozen hash browns, water, and chicken broth to the slow cooker. The prepped ingredients will come into play a little later.
This recipe uses frozen hash browns instead of fresh potatoes, in order to save you time, but if you have fresh, chop them up small and use them. I always shop my pantry first to save money, so use what you have!
To cook the slow cooked baked potato soup, set the crockpot to low for 6-8 hours.
During the last 30 minutes, add the prepped ingredients. This mixture will help to thicken up the soup, so be sure to give it a good shake before adding. These ingredients are added towards the end because dairy will often curdle in the slow cooker if added too soon.
Lastly, finish off the slow cooked baked potato soup with cheese and bacon. Anything with cheese and bacon has to be good!

- 1/2 C frozen chopped onions
- 1 C milk
- 3 T flour
- 1 bag frozen hash browns
- 1 C water
- 32 ounce chicken broth
- 1 C shredded cheddar cheese
- 1/2 C real bacon bits or cooked chopped bacon
Instructions
- Mix all ingredients in a small bowl with lid.
- Add hash browns, water and broth to slow cooker.
- Cook on low for 6-8 hours.
- Add milk/flour mixture, stir and cook 30 more minutes on high to thicken soup.
- Blend with blender if desired for a creamier soup. Top with cheese and bacon bits.
