Ingredients
Prep
- 6 boneless chicken breasts
- 2 zucchini
- 1 T minced garlic
- 1 T ground paprika
- 1 t ground cumin
- 1 t ground coriander
- 1/2 t cayenne pepper
- 2 T olive oil
On Cooking Day
- 6 C salad greens
Instructions
To Assemble
- Cut chicken breasts into bite-sized cubes.
- Slice squash and zucchini into medallions.
- Combine all ingredients in large zipper bag. Zip to seal and squish to coat.
To Cook
- Pour contents of bag onto cookie sheet sprayed with non stick spray in a single layer.
- Bake at 350 degrees for 30 minutes or until chicken and vegetables are done.
- Serve with green salad.
