Ingredients
Prep
- 1 C frozen chopped onion
- 1 C frozen chopped bell pepper
- 14 oz can diced tomatoes
- 1 T chili powder
- 1/2 t cumin
- 1/2 t garlic powder
- 1/2 t oregano
- salt and pepper to taste
- 6 russet potatoes
On Cooking Day
- 2 lb ground turkey or chicken
- 2 avocados
- 6 C salad greens
Instructions
To Assemble
- Add all ingredients except potatoes to large zipper bag. Zip to seal.
- Wrap potatoes in foil.
To Cook
- Add potatoes to slow cooker and cook on low for 8 hours.
- Brown turkey in skillet and add bag contents. Simmer 5-10 minutes and serve over baked potatoes with avocado slices and salad.
