Turkey Taco Stuffed Potatoes – MD

Ingredients

Prep
  • 1 C frozen chopped onion
  • 1 C frozen chopped bell pepper
  • 14 oz can diced tomatoes
  • 1 T chili powder
  • 1/2 t cumin
  • 1/2 t garlic powder
  • 1/2 t oregano
  • salt and pepper to taste
  • 6 russet potatoes
On Cooking Day
  • 2 lb ground turkey or chicken
  • 2 avocados
  • 6 C salad greens

Instructions

To Assemble
  1. Add all ingredients except potatoes to large zipper bag. Zip to seal.
  2. Wrap potatoes in foil.
To Cook
  1. Add potatoes to slow cooker and cook on low for 8 hours.
  2. Brown turkey in skillet and add bag contents. Simmer 5-10 minutes and serve over baked potatoes with avocado slices and salad.
