Ingredients
Prep
- 2 lb thick-cut pork chops
- 20 oz can pineapple chunks drained
- 2 bell peppers any color
- 2 zucchini medium
- 12 oz mushrooms
- 3/4 C molasses
- 1/4 C soy sauce or liquid aminos
On Cooking Day
- 2 bag frozen rice steamers
Instructions
To Assemble
- Cut pork chops into 2" cubes and place in large zipper bag.
- Chop bell peppers and zucchini into bite size pieces. Add it all along with mushrooms to the pork.
- Drain pineapple and discard all but 1/2 of the juice. Mix the juice with molasses and soy sauce and pour into bag with pork. Add pineapple and zip and shake.
To Cook
- Drain pork mixture and pour onto large baking sheet sprayed with non stick spray.
- Broil on high 5-7 minutes or until pork is cooked through. Cook rice according to package directions.
