Tropical Pork UnKabobs – C

Ingredients

Prep
  • 2 lb thick-cut pork chops
  • 20 oz can pineapple chunks drained
  • 2 bell peppers any color
  • 2 zucchini medium
  • 12 oz mushrooms
  • 3/4 C molasses
  • 1/4 C soy sauce or liquid aminos
On Cooking Day
  • 2 bag frozen rice steamers

Instructions

To Assemble
  1. Cut pork chops into 2″ cubes and place in large zipper bag.
  2. Chop bell peppers and zucchini into bite size pieces. Add it all along with mushrooms to the pork.
  3. Drain pineapple and discard all but 1/2 of the juice. Mix the juice with molasses and soy sauce and pour into bag with pork. Add pineapple and zip and shake.
To Cook
  1. Drain pork mixture and pour onto large baking sheet sprayed with non stick spray.
  2. Broil on high 5-7 minutes or until pork is cooked through. Cook rice according to package directions.
