Tomato Basil Chicken Bake - C

Ingredients

Prep
  • 2 14 oz canned diced tomatoes
  • 3 t minced garlic
  • 1 t Italian seasoning
  • salt and pepper to taste
  • 1/4 C fresh basil
  • 6 boneless chicken cutlets
  • 2 T olive oil
  • 1 t Italian seasoning
  • salt and pepper to taste
On Cooking Day
  • 12 oz bowtie pasta
  • 1 1/2 C mozzarella cheese
  • fresh basil for garnish
  • 6 C salad greens

Instructions

To Assemble
  1. Drain tomatoes. In a baking dish, add first 4 ingredients.
  2. Chop fresh basil and add to dish. Stir to mix.
  3. Add chicken cutlets on top of mixture, drizzle with olive oil.
  4. Season chicken with additional Italian seasoning and salt and pepper. Cover with foil.
To Cook
  1. Bake covered at 400 degrees for 30 minutes, or until chicken is cooked through.
  2. Cook pasta according to package directions.
  3. Take chicken out of oven. Add cheese and bake uncovered for an additional 5 minutes.
  4. Garnish with fresh basil and serve over pasta and with a side salad.
