Tilapia Tacos - CE
Green salsa, brown rice and black beans

Ingredients

Prep
  • 6 tilapia fillets or any white fish
  • 1 T olive oil
  • 1 t chili powder
  • 1 T lime juice
  • 1/2 t ground cumin
  • 1 jalapeno pepper optional
On Cooking Day
  • 12 corn tortillas or bibb lettuce
  • 2 bag frozen brown rice steamers
  • 15 oz canned black beans or pinto beans
  • 2 C shredded cabbage slaw optional
  • 1/2 C salsa optional

Instructions

To Assemble
  1. Spray a 9 x 13 baking dish with non stick spray.
  2. Place tilapia in baking dish.
  3. Mix next 4 ingredients in a small bowl and brush over tilapia.
  4. Chop jalapeno, if using, and sprinkle over tilapia. Cover with plastic wrap.
To Cook
  1. Bake uncovered in 425 degree oven for 15 minutes or until fish flakes easily with fork.
  2. Rough chop fish and serve in corn tortillas or Bibb lettuce cups and top with cabbage slaw and salsa.
  3. Cook rice and black beans according to package directions.

*Non seafood eaters, substitute with chicken or steak.  May require longer cook time.
