Ingredients
Prep
- 2 lb boneless chicken breast
- 1 C coconut milk
- 1/2 C Peanut butter
- 1/4 C soy sauce
- 3 T lime juice
- 3 T brown sugar
- 2 t minced garlic
On Cooking Day
- 1 pkg snow peas
- 2 bag frozen brown rice steamers
Instructions
To Assemble
- Cut chicken into bite size pieces and place in a large zipper bag. Mix next 6 ingredients in a small bowl with lid until smooth.
- Add half the peanut sauce in bag with chicken, zip to seal and squish to mix. Save remaining half for serving.
To Cook
- Place pork on a baking sheet lined with foil. Bake at 450 in oven for 15-20 minutes or until chicken is cooked through.
- Serve with remaining peanut sauce, snow peas, and rice.
