Thai Peanut Chicken – CE

Ingredients

Prep
  • 2 lb boneless chicken breast
  • 1 C coconut milk
  • 1/2 C Peanut butter
  • 1/4 C soy sauce
  • 3 T lime juice
  • 3 T brown sugar
  • 2 t minced garlic
On Cooking Day
  • 1 pkg snow peas
  • 2 bag frozen brown rice steamers

Instructions

To Assemble
  1. Cut chicken into bite size pieces and place in a large zipper bag. Mix next 6 ingredients in a small bowl with lid until smooth.
  2. Add half the peanut sauce in bag with chicken, zip to seal and squish to mix. Save remaining half for serving.
To Cook
  1. Place pork on a baking sheet lined with foil. Bake at 450 in oven for 15-20 minutes or until chicken is cooked through.
  2. Serve with remaining peanut sauce, snow peas, and rice.
