Ingredients
Prep
- 1 deli rotisserie chicken
- 3/4 C mayonnaise
- 1/4 C enchilada sauce
- 1 1/2 T taco seasoning
- 1 C frozen corn
- 1 C frozen chopped bell pepper
- 1/4 C fresh chopped cilantro
- 1 T lime juice
On Cooking Day
- 6 hamburger buns or large crescent rolls
- 1 bag tortilla chips
- 1/2 C salsa
- 2 avocados
- 2 C shredded lettuce or lettuce leaves
Instructions
To Assemble
- Shred chicken and add to medium-large bowl with lid.
- Add next 7 ingredients and mix well. Freeze any remaining enchilada sauce for future recipes.
To Cook
- No cooking needed! Just serve chicken on buns with lettuce, chips, salsa and sliced avocado.
