Tex Mex Chicken Salad Sandwiches – C

Ingredients

Prep
  • 1 deli rotisserie chicken
  • 3/4 C mayonnaise
  • 1/4 C enchilada sauce
  • 1 1/2 T taco seasoning
  • 1 C frozen corn
  • 1 C frozen chopped bell pepper
  • 1/4 C fresh chopped cilantro
  • 1 T lime juice
On Cooking Day
  • 6 hamburger buns or large crescent rolls
  • 1 bag tortilla chips
  • 1/2 C salsa
  • 2 avocados
  • 2 C shredded lettuce or lettuce leaves

Instructions

To Assemble
  1. Shred chicken and add to medium-large bowl with lid.
  2. Add next 7 ingredients and mix well. Freeze any remaining enchilada sauce for future recipes.
To Cook
  1. No cooking needed! Just serve chicken on buns with lettuce, chips, salsa and sliced avocado.
