Ingredients
Prep
- 6 salmon fillets
- 16 oz can pineapple slices
- 1/2 C Thai sweet chili sauce
- 2 T rice vinegar
- 1 T soy sauce
- 1 T brown sugar
- salt and pepper to taste
On Cooking Day
- 2 bag frozen brown rice steamers
- 1 pkg dinner rolls
- 16 oz frozen green beans
Instructions
To Assemble
- Place salmon fillets in a 9x13 baking dish and season with salt and pepper. Drain pineapples (save juice) and place around salmon.
- In a small bowl, whisk together sweet chili sauce, rice vinegar, soy sauce, brown sugar and pineapple juice.
- Pour mixture evenly over salmon fillets, flipping each fillet in marinade to coat each one evenly. Cover with lid.
To Cook
- Bake at 425 for 12-15 minutes. Switch oven to broil and cook for an additional 4-5 minutes, or until edges of salmon just begin to blacken.
- Prepare rice and green beans according to package directions.
- Serve with dinner rolls if desired.
