Ingredients
Prep
- 3/4 C sun dried tomatoes in oil
- 1/2 bunch parsley
- 4 oz chopped olives
- 1 t dried oregano
- 1 1/2 C feta cheese
- salt and pepper to taste
- 6 sweet potatoes
On Cooking Day
- 10 C salad greens
Instructions
To Assemble
- Chop the parsley and sun dried tomatoes and add to a bowl with lid along with next 4 ingredients.
- Wrap each sweet potato in foil.
To Cook
- Place foil wrapped sweet potatoes in slow cooker and cook on low for 7-8 hours.
- Remove potatoes, slice open and stuff with sun dried tomato mixture. Serve with green salad.
