Ingredients
Prep
- 6 boneless chicken breasts
- salt and pepper to taste
- 1/4 C goat cheese
- 1/2 C sun dried tomatoes
- 1 t garlic powder
On Cooking Day
- 2 bag frozen brown rice steamers
- 16 oz frozen broccoli and cauliflower blend
Instructions
To Assemble
- Chop sun dried tomatoes. Mix in a bowl with goat cheese and garlic powder.
- Cut a slit in the side of each chicken breast and stuff with cheese mixture. Season with salt and pepper. Place chicken in baking dish and cover.
To Cook
- Bake uncovered at 400 degrees for 30 min or until chicken is cooked through.
- Cook rice and broccoli according to package directions.
