Sun Dried Tomato and Goat Cheese Stuffed Chicken – CE

Ingredients

Prep
  • 6 boneless chicken breasts
  • salt and pepper to taste
  • 1/4 C goat cheese
  • 1/2 C sun dried tomatoes
  • 1 t garlic powder
On Cooking Day
  • 2 bag frozen brown rice steamers
  • 16 oz frozen broccoli and cauliflower blend

Instructions

To Assemble
  1. Chop sun dried tomatoes. Mix in a bowl with goat cheese and garlic powder.
  2. Cut a slit in the side of each chicken breast and stuff with cheese mixture. Season with salt and pepper. Place chicken in baking dish and cover.
To Cook
  1. Bake uncovered at 400 degrees for 30 min or until chicken is cooked through.
  2. Cook rice and broccoli according to package directions.
