Ingredients
Prep
- 1/2 lb baby new potatoes
- 2 plum tomatoes
- 15 oz cans cream style corn
- 2 C frozen corn
- 3 C frozen onion and pepper blend
- 1/2 C milk
- 1/2 T chipotle in adobo adjust to personal taste
- 1 t minced garlic
- 1/4 t ground cumin
- salt and pepper to taste
On Cooking Day
- 30 oz vegetable broth or chicken broth
- 1/4 C sour cream
Instructions
To Assemble
- Chop tomatoes. Cut potatoes in small bite size pieces.
- Place all ingredients in a large zipper bag. Season with salt and pepper. Zip to seal and shake to mix.
To Cook
- Pour corn mixture into slow cooker. Add broth. Mix and cook on low for 7-8 hours. Stir in sour cream and serve.
