Ingredients
Prep
- 1 can pinto beans
- 1 1/2 lb extra lean ground beef must be 90-95% lean
- 1 C frozen chopped onions
- 1 C frozen corn
- 1 C salsa
- 4 oz chopped green chiles drained, 4.5-ounce
- 1 T taco seasoning
- 10 oz enchilada sauce mild
On Cooking Day
- 16 oz frozen tater tots
- 1 C shredded cheddar cheese
- 6 C salad greens
Instructions
To Assemble
- Drain and rinse beans and add to large zipper bag along with remaining ingredients. Zip and squish around to mix well.
To Cook
- Pour meat mixture into slow cooker and top with tater tots.
- Cook on low for 6-8 hours. Top with cheese and cook additional 10 minutes.
- Serve with salad.
