Slow Cooker Mexican Tot Dinner – C

Ingredients

Prep
  • 1 can pinto beans
  • 1 1/2 lb extra lean ground beef must be 90-95% lean
  • 1 C frozen chopped onions
  • 1 C frozen corn
  • 1 C salsa
  • 4 oz chopped green chiles drained, 4.5-ounce
  • 1 T taco seasoning
  • 10 oz enchilada sauce mild
On Cooking Day
  • 16 oz frozen tater tots
  • 1 C shredded cheddar cheese
  • 6 C salad greens

Instructions

To Assemble
  1. Drain and rinse beans and add to large zipper bag along with remaining ingredients. Zip and squish around to mix well.
To Cook
  1. Pour meat mixture into slow cooker and top with tater tots.
  2. Cook on low for 6-8 hours. Top with cheese and cook additional 10 minutes.
  3. Serve with salad.

*meat must be 90-95% lean. may also mix 1/2 ground beef with 1/2 ground turkey.
