Ingredients
Prep
- 32 oz frozen butternut squash cubed
- 8 oz frozen chopped carrots
- 1 C frozen chopped onion
- 1 C frozen chopped bell pepper
- 2 t minced garlic
- 1 t dried thyme
- salt and pepper to taste
On Cooking Day
- 3 C chicken broth
- 1/2 C real bacon bits or cooked chopped bacon
- 1/4 C heavy cream optional
- 12 C salad greens
- 1 pkg dinner rolls
Instructions
To Assemble
- Add all ingredients to large zipper bag. Zip to seal.
To Cook
- Pour squash mixture into slow cooker along with chicken broth. Cook on low for 6-8 hours.
- Mix with blender. Garnish with bacon bits and heavy cream (optional).
- Serve with salad and dinner rolls.
