Ingredients

Prep
  • 32 oz frozen butternut squash cubed
  • 8 oz frozen chopped carrots
  • 1 C frozen chopped onion
  • 1 C frozen chopped bell pepper
  • 2 t minced garlic
  • 1 t dried thyme
  • salt and pepper to taste
On Cooking Day
  • 3 C chicken broth
  • 1/2 C real bacon bits or cooked chopped bacon
  • 1/4 C heavy cream optional
  • 12 C salad greens
  • 1 pkg dinner rolls

Instructions

To Assemble
  1. Add all ingredients to large zipper bag. Zip to seal.
To Cook
  1. Pour squash mixture into slow cooker along with chicken broth. Cook on low for 6-8 hours.
  2. Mix with blender. Garnish with bacon bits and heavy cream (optional).
  3. Serve with salad and dinner rolls.
