Ingredients
Prep
- 1 lb Andouille sausage or any smoked sausage
- 2 T olive oil
- 3 T minced garlic
- 2 T Cajun seasoning
- 4 C frozen chopped onion celery pepper mix
- 28 oz fire roasted diced tomatoes
- 1/4 C butter
- 1/4 C cornstarch
- 1/4 C heavy cream or half and half
On Cooking Day
- 4 C chicken broth
- 1 lb large raw peeled shrimp
- 3 bag frozen brown rice steamer
- 8 C salad greens
Instructions
To Assemble
- Slice sausage into bite size pieces and add to large zipper bag.
- Add next 5 ingredients to sausage. Zip and shake to mix.
- Mix last 3 ingredients in a small bowl with lid.
To Cook
- Pour sausage mixture into slow cooker along with chicken broth and cook on low for 4 hours.
- Turn slow cooker to high and add shrimp and prepped cream mixture during last 10 minutes of cook time. Watch closely to not overcook.
- Cook rice according to package directions. Serve with salad.
