Ingredients
Prep
- 1/4 C cilantro
- 2 bell peppers
- 2 lb chicken breast or thighs
- 2 t minced garlic
- 1 C salsa verde green salsa
- 1/4 C honey
- 1/4 C lime juice
- 2 t chili powder
- 1 t paprika
- 1/2 t cumin
On Cooking Day
- 2 avocados
- 6 C salad greens
- 2 bag steamers brown rice
- 12 tortillas flour or corn
Instructions
To Assemble
- Chop cilantro and bell peppers and add to large zipper bag.
- Add next 8 ingredients to same bag. Zip to seal.
To Cook
- Pour chicken mixture into slow cooker. Cook on low for 6-8 hours.
- Cook rice according to package directions. Serve with avocados, rice and salad and tortillas.
