Slow Cooked Salsa Verde Chicken – CE

Ingredients

Prep
  • 1/4 C cilantro
  • 2 bell peppers
  • 2 lb chicken breast or thighs
  • 2 t minced garlic
  • 1 C salsa verde green salsa
  • 1/4 C honey
  • 1/4 C lime juice
  • 2 t chili powder
  • 1 t paprika
  • 1/2 t cumin
On Cooking Day
  • 2 avocados
  • 6 C salad greens
  • 2 bag steamers brown rice
  • 12 tortillas flour or corn

Instructions

To Assemble
  1. Chop cilantro and bell peppers and add to large zipper bag.
  2. Add next 8 ingredients to same bag. Zip to seal.
To Cook
  1. Pour chicken mixture into slow cooker. Cook on low for 6-8 hours.
  2. Cook rice according to package directions. Serve with avocados, rice and salad and tortillas.
