Ingredients
Prep
- 2 lb pork tenderloin
- 1/4 C red wine vinegar
- 2 T minced garlic
- salt and pepper to taste
- 8 oz sliced mushrooms any kind
- 1 C heavy cream
- 1/2 C grated Parmesan cheese
On Cooking Day
- 2 C chicken broth
- 16 oz penne pasta
- 6 oz arugula or spinach
- 10 C salad greens
- 1 pkg dinner rolls
Instructions
To Assemble
- Add first 5 ingredients to a large zipper bag. Zip and shake to mix well.
- Add last 2 ingredients to a small bowl with lid.
To Cook
- Add pork loin along with chicken broth to slow cooker. Cook on low for 7-8 hours.
- Shred pork with two forks and add dried pasta and cook on high for 30 minutes or until pasta is tender.
- Pour in cream mixture and arugula, mix well and warm before serving.
- Serve with salad and dinner rolls.
