Slow Cooked Creamy Pulled Pork Pasta – C

Ingredients

Prep
  • 2 lb pork tenderloin
  • 1/4 C red wine vinegar
  • 2 T minced garlic
  • salt and pepper to taste
  • 8 oz sliced mushrooms any kind
  • 1 C heavy cream
  • 1/2 C grated Parmesan cheese
On Cooking Day
  • 2 C chicken broth
  • 16 oz penne pasta
  • 6 oz arugula or spinach
  • 10 C salad greens
  • 1 pkg dinner rolls

Instructions

To Assemble
  1. Add first 5 ingredients to a large zipper bag. Zip and shake to mix well.
  2. Add last 2 ingredients to a small bowl with lid.
To Cook
  1. Add pork loin along with chicken broth to slow cooker. Cook on low for 7-8 hours.
  2. Shred pork with two forks and add dried pasta and cook on high for 30 minutes or until pasta is tender.
  3. Pour in cream mixture and arugula, mix well and warm before serving.
  4. Serve with salad and dinner rolls.
