Ingredients
Prep
- 5 boneless chicken breasts
- 10 oz frozen chopped carrots
- 1 T minced garlic
- 1/2 C brown rice uncooked
- 1/2 C pesto sauce basil
- 1 parmesan cheese rind
On Cooking Day
- 4 C chicken broth
- 1 1/2 C half and half
- 1/2 C grated Parmesan cheese
- 10 C salad greens
- 1 pkg dinner rolls
Instructions
To Assemble
- Add all ingredients to a large zipper bag. Zip to seal.
To Cook
- Add chicken mixture to slow cooker along with chicken broth.
- Cook on low for 6-8 hours. Remove chicken and cheese rind (discard rind). Shred chicken and put back in slow cooker along with half and half and grated parmesan cheese.
- Cook dinner rolls according to package directions and serve with salad.
