Slow Cooked Chicken Pesto Soup- CE

Ingredients

Prep
  • 5 boneless chicken breasts
  • 10 oz frozen chopped carrots
  • 1 T minced garlic
  • 1/2 C brown rice uncooked
  • 1/2 C pesto sauce basil
  • 1 parmesan cheese rind
On Cooking Day
  • 4 C chicken broth
  • 1 1/2 C half and half
  • 1/2 C grated Parmesan cheese
  • 10 C salad greens
  • 1 pkg dinner rolls

Instructions

To Assemble
  1. Add all ingredients to a large zipper bag. Zip to seal.
To Cook
  1. Add chicken mixture to slow cooker along with chicken broth.
  2. Cook on low for 6-8 hours. Remove chicken and cheese rind (discard rind). Shred chicken and put back in slow cooker along with half and half and grated parmesan cheese.
  3. Cook dinner rolls according to package directions and serve with salad.
