Ingredients
Prep
- 3 celery stalks
- 28 oz pinto beans or black beans
- 2 T minced garlic
- 1 C frozen chopped onions
- 1 C matchstick carrots
- 28 oz diced tomatoes
- 1/4 C Frank's red hot sauce
- 2 T honey
- 1 T cumin
- 1 T chili powder
- 1 T paprika
- salt and pepper to taste
- 3 boneless chicken breasts
On Cooking Day
- 1/2 C blue cheese crumbles optional
- 10 C salad greens
- 4 C chicken broth
Instructions
To Assemble
- Chop celery and rinse and drain beans and add to large zipper bag with remaining ingredients.
To Cook
- Pour chicken mixture into slow cooker along with chicken broth and cook on low for 6-8 hours. Remove chicken and shred and return to soup.
- Top with blue cheese crumbles if using and serve with salad.
