Slow Cooked Buffalo Chicken Chili – CE

Ingredients

Prep
  • 3 celery stalks
  • 28 oz pinto beans or black beans
  • 2 T minced garlic
  • 1 C frozen chopped onions
  • 1 C matchstick carrots
  • 28 oz diced tomatoes
  • 1/4 C Frank’s red hot sauce
  • 2 T honey
  • 1 T cumin
  • 1 T chili powder
  • 1 T paprika
  • salt and pepper to taste
  • 3 boneless chicken breasts
On Cooking Day
  • 1/2 C blue cheese crumbles optional
  • 10 C salad greens
  • 4 C chicken broth

Instructions

To Assemble
  1. Chop celery and rinse and drain beans and add to large zipper bag with remaining ingredients.
To Cook
  1. Pour chicken mixture into slow cooker along with chicken broth and cook on low for 6-8 hours. Remove chicken and shred and return to soup.
  2. Top with blue cheese crumbles if using and serve with salad.
