Ingredients
Prep
- 1 jalapeno pepper
- 2 lb beef roast any cut
- 1 C frozen chopped onion
- 2 T minced garlic
- 2 T lime juice
- 1 T chili powder
- 1 t dried basil
- salt and pepper to taste
On Cooking Day
- 1 C beef broth
- 16 oz frozen green beans
- 15 oz couscous
Instructions
To Assemble
- Slice jalapeño (remove seeds if desired) and add to large zipper bag along with remaining ingredients.
- For Instant Pot: cut roast into 3-4 chunks for best results.
To Cook
- Slow Cook: Pour bag contents into slow cooker along with beef broth and cook on low 8-10 hours.
- Instant Pot: Pour bag contents into IP along with beef broth and cook 60-70 minutes. Quick release pressure.
- Cook green beans and couscous according to package directions.
