Ingredients
Prep
- 1 lbs lean stew meat
- 1 C frozen chopped onion
- 42 oz canned diced tomatoes we used fire roasted
- 2 t minced garlic
- 1/2 t dried oregano
- 1/2 t dried basil
- 2 oz cream cheese
On Cooking Day
- 9 oz cheese filled tortellini
- 1 C shredded mozzarella cheese
- 6 C salad greens
Instructions
To Assemble
- Add all ingredients to a large zipper bag and zip to seal.
To Cook
- Pour meat mixture into slow cooker and cook on low for 6-8 hours or high 4 hours.
- Add tortellini and cheese and mix well. Cook an additional 20-30 minutes on high.
- Instant Pot: Add meat mixture to IP and pressure cook for 25 minutes. Add tortellini and cheese and cook on saute for another 5-10 minutes.
- Sprinkle with cheese and serve with salad.
