Slow Cheesy Beef Tortellini – F

Ingredients

Prep
  • 1 lbs lean stew meat
  • 1 C frozen chopped onion
  • 42 oz canned diced tomatoes we used fire roasted
  • 2 t minced garlic
  • 1/2 t dried oregano
  • 1/2 t dried basil
  • 2 oz cream cheese
On Cooking Day
  • 9 oz cheese filled tortellini
  • 1 C shredded mozzarella cheese
  • 6 C salad greens

Instructions

To Assemble
  1. Add all ingredients to a large zipper bag and zip to seal.
To Cook
  1. Pour meat mixture into slow cooker and cook on low for 6-8 hours or high 4 hours.
  2. Add tortellini and cheese and mix well. Cook an additional 20-30 minutes on high.
  3. Instant Pot: Add meat mixture to IP and pressure cook for 25 minutes. Add tortellini and cheese and cook on saute for another 5-10 minutes.
  4. Sprinkle with cheese and serve with salad.
