Ingredients
Prep
- 1 1/2 lb ground turkey or ground beef
- 1 C frozen chopped onion
- 2 C frozen chopped bell peppers
- 2 t Worcestershire sauce
- 2 t minced garlic
- 1 t chili powder
- 1/2 t cumin
- 1/2 t onion powder
- salt and pepper to taste
On Cooking Day
- 1 T olive oil
- 1 can diced tomatoes drained
- 2 bag frozen cauliflower rice or brown or white rice
- 1 C shredded Mexican-style cheese
- 10 C salad greens
- 1/4 C freshly chopped cilantro for serving
- 1 bag baked tortilla chips
Instructions
To Assemble
- Add all ingredients to a large zipper bag. Zip to seal and squish to mix.
To Cook
- Heat olive oil in a large skillet over medium-high heat. Add turkey mixture. Sprinkle with a pinch of salt if desired. Cook, stirring occasionally until turkey is cooked, about 7-8minutes. Remove from skillet and set aside.
- Reduce heat to medium and stir in drained diced tomatoes. Continue to cook until heated through then reduce to a simmer for 10-15 minutes. Season with additional salt and pepper if desired.
- Meanwhile cook cauliflower rice according to package directions. To serve, add rice to a bottom of a bowl of plate. Top with pepper and turkey mixture mixture. Sprinkle with cheese. Garnish with chopped cilantro.
- Serve alongside a salad and tortilla chips for scooping or crushing on top.
